INGREDIENTS
6 oz Salmon Fillet
1 tsp Olive Oil
1 cup Asparagus
2 cups Cauliflower
1 tbsp Non-fat Greek Yogurt
1 tsp Unsalted Butter
Salt & Pepper to taste
PREPARATION
Season the salmon fillet with salt and pepper on both sides.
Heat olive oil in a non-stick pan over medium-high heat.
Sear the salmon, skin side down if applicable, for about 3-4 minutes until a golden crust forms, then flip and cook for another 3-4 minutes until cooked through.
Meanwhile, steam the asparagus in a steamer basket over boiling water for 4-5 minutes until tender yet crisp.
For the cauliflower mash, steam the cauliflower florets until very tender (about 10 minutes).
Drain the cauliflower and blend or mash it with the Greek yogurt and unsalted butter until smooth. Season with salt and pepper to taste.
Plate the seared salmon alongside the steamed asparagus and a generous serving of cauliflower mash. Serve immediately.
