Enjoy a comforting yet light dish where velvety cauliflower grits provide a creamy base for succulent, spiced garlic shrimp. This dish marries the natural sweetness of roasted cauliflower with bold garlic and spice, finished with a hint of creaminess from a touch of low-fat cream cheese.
INGREDIENTS
6 oz Shrimp (peeled and deveined)
2 cups Cauliflower florets
1/4 cup Unsweetened Almond Milk
1 tbsp Nutritional Yeast
1 tbsp Low-Fat Cream Cheese
1 tsp Olive Oil
2 cloves Garlic
1 tsp Paprika
1/2 tsp Cayenne Pepper
Salt and Black Pepper to taste
PREPARATION
Steam or boil the cauliflower florets until tender, about 8-10 minutes.
In a blender, combine the steamed cauliflower, unsweetened almond milk, nutritional yeast, and low-fat cream cheese. Blend until very smooth and creamy. Season with salt and pepper to taste.
Pat the shrimp dry. In a small bowl, toss the shrimp with paprika, cayenne pepper, and a pinch of salt.
Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
Add the seasoned shrimp to the skillet and cook for 2-3 minutes per side until the shrimp turn pink and are just cooked through.
Spoon the creamy cauliflower grits into a bowl or plate and top with the spiced garlic shrimp. Garnish with additional black pepper if desired and serve immediately.
