INGREDIENTS
5 oz Salmon Fillet
100 g Red Potato
1 tsp Olive Oil
1 clove Garlic
2 tbsp Mixed Fresh Herbs
2 cups Spinach
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F.
Thinly slice the garlic clove and toss with chopped mixed fresh herbs, salt, and pepper to create the herb crust.
Place the salmon fillet on a baking tray lined with parchment paper, then gently pat the herb mixture onto the top of the salmon.
Cut the red potato into small cubes or wedges. Toss them with olive oil, a pinch of salt, and a little minced garlic if desired.
Spread the potatoes on a baking sheet and roast in the oven for about 20-25 minutes until golden and crispy.
While the potatoes roast, heat a non-stick skillet over medium heat and add the spinach. Sauté for 2-3 minutes until just wilted, seasoning with salt and pepper.
Bake the herb-crusted salmon in the preheated oven for approximately 12-15 minutes, until just cooked through.
Plate the salmon alongside the roasted garlic red potatoes and a serving of sautéed spinach. Serve immediately.
