100g Baby Potatoes
1 Garlic Clove
1 tsp Unsalted Butter

1 tbsp Fresh Thyme
Salt & Pepper to taste
PREPARATION
Preheat the oven to 400°F.
Wash and halve the baby potatoes. Toss them in a little olive oil, salt, and pepper, and spread them on a baking sheet.
Roast the potatoes in the oven for about 20-25 minutes until crispy on the outside and tender inside.
While the potatoes roast, pat the sirloin steak dry and season generously with salt and pepper on both sides.
Heat a skillet over medium-high heat. Once hot, add the steak and sear for about 3 minutes on each side for medium-rare, or adjust according to your preferred doneness.
In the last minute of cooking, add the unsalted butter and the minced garlic (from 1 garlic clove) to the pan. Spoon the melted herb-garlic butter over the steak as it finishes cooking.
