INGREDIENTS
4 ounces Ground Pork
1 large Egg
0.75 cup cooked Rice Noodles
0.5 medium Red Bell Pepper
1 cup Baby Spinach
1 tablespoon Fresh Ginger
2 cloves Garlic
1 tablespoon Low-Sodium Soy Sauce
1 teaspoon Sesame Oil
PREPARATION
Prepare the rice noodles according to package instructions and set aside.
In a small bowl, beat the egg lightly and set aside.
Heat a non-stick skillet over medium heat. Add a few drops of sesame oil and sauté the minced garlic and grated ginger until fragrant.
Add the ground pork to the skillet. Cook until it is browned and fully cooked, breaking it apart with a spatula.
Stir in the red bell pepper slices and baby spinach, cooking just until the spinach begins to wilt.
Push the pork and vegetables to one side and pour the beaten egg into the cleared space. Scramble the egg until just set, then combine with the pork mixture.
Add the cooked rice noodles and drizzle the low-sodium soy sauce over the top. Toss everything together until well combined and heated through.
Finish with a light drizzle of sesame oil, taste and adjust seasoning if needed, then serve warm.
