Crispy Loaded Sweet Potato Boats with Turkey Bacon
Enjoy a flavorful twist on classic loaded sweet potatoes where crispy turkey bacon, a perfectly cooked egg, and a sprinkle of reduced-fat cheddar elevate a tender baked sweet potato. The creamy avocado and fresh green onions add texture and brightness, making this a balanced, savory meal perfect for breakfast, lunch, or dinner.
INGREDIENTS
1 medium baked Sweet Potato (114g)
2 slices Turkey Bacon (approx. 56g total)
1 large hard-boiled Egg (50g)
1/4 cup shredded Reduced-Fat Cheddar Cheese (28g)
1/4 Avocado (50g)
2 tbsp chopped Green Onions (10g)
1 tsp Paprika
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F.
Wash and prick the sweet potato with a fork, then bake it on a lined baking tray for about 45 minutes or until tender.
While the sweet potato bakes, cook the turkey bacon in a skillet over medium heat until crispy, then crumble or chop it into bite-sized pieces.
Hard-boil the egg by placing it in boiling water for 9-10 minutes. Once done, cool and peel it, then chop into small pieces.
Once the sweet potato is cool enough to handle, slice it in half lengthwise and gently scoop out a bit of the center to create a boat.
Layer the sweet potato boats with chopped turkey bacon, hard-boiled egg pieces, shredded reduced-fat cheddar cheese, and diced avocado. Sprinkle with paprika, salt, and pepper.
Garnish with chopped green onions and serve immediately while warm.
