5 oz Turkey Breast
1 cup Green Beans
1 small Sweet Potato (150g)
1 tsp Olive Oil (for searing)
2/3 tbsp Olive Oil (for mash)
1 clove Garlic
Salt and Pepper
PREPARATION
Preheat a non-stick skillet over medium-high heat and season the turkey breast with salt and pepper.
Add 1 teaspoon of olive oil to the skillet and sear the turkey breast for about 3-4 minutes per side until golden and cooked through. Remove from heat and let rest.
Meanwhile, steam or lightly sauté the green beans until they are tender-crisp. In a separate pan, lightly sauté the minced garlic in a tiny drizzle of olive oil if desired, then toss with the green beans.
Prick the sweet potato with a fork and roast in a preheated 400°F oven for about 40 minutes or until tender. Once roasted, scoop out the flesh into a bowl.
Mash the sweet potato with 2/3 tablespoon of olive oil, a pinch of salt and pepper until smooth and creamy.
