1 inch Fresh Ginger, minced
1 tsp Sesame Oil
1 tbsp Low Sodium Soy Sauce
1 tbsp Rice Vinegar
1 tsp Honey
1 tsp Sesame Seeds
1 tsp Cornstarch
PREPARATION
Press the tofu to remove excess moisture, then cut it into bite-sized cubes.
In a small bowl, whisk together the soy sauce, rice vinegar, honey, and cornstarch. Set aside.
Heat sesame oil in a non-stick skillet over medium-high heat. Add the tofu cubes and cook until all sides are golden and crispy, about 5-7 minutes. Remove tofu from the skillet and set aside.
In the same skillet, add minced garlic and ginger. Sauté for 30 seconds until fragrant.
Add the red bell pepper (sliced), broccoli florets, carrot (julienned), and snap peas. Stir-fry for about 3-4 minutes until the vegetables are crisp-tender.
