INGREDIENTS
6 oz Salmon Fillet
1 cup Fresh Asparagus
1 tbsp Extra Virgin Olive Oil
1 medium Lemon
1 tbsp Fresh Parsley (chopped)
1 tbsp Fresh Dill (chopped)
1 Garlic clove (minced)
Salt and Black Pepper (to taste)
PREPARATION
Preheat the oven to 400°F.
Line a baking sheet with parchment paper and arrange the salmon fillet on one side.
In a small bowl, combine chopped parsley, dill, minced garlic, salt, and pepper. Press this herb mixture onto the top of the salmon fillet to form a crust.
On the other side of the baking sheet, place the asparagus. Drizzle the asparagus with extra virgin olive oil and squeeze half of the lemon over them. Season lightly with salt and pepper.
Slice the remaining lemon into wedges for serving.
Place the baking sheet in the oven and bake for 12-15 minutes, or until the salmon flakes easily with a fork and the asparagus are tender-crisp.
Remove from the oven and plate the salmon with a side of asparagus. Garnish with fresh lemon wedges and an extra sprinkle of herbs if desired. Enjoy your meal!
