Herb-Crusted Chicken Caesar with Crispy Romaine
Enjoy a vibrant twist on a classic Caesar salad with tender herb-crusted chicken and crisp, lightly dressed romaine. The succulent, oven-baked chicken is delicately coated in a blend of mixed fresh herbs and whole wheat breadcrumbs, perfectly complementing the crunch of romaine tossed in light Caesar dressing, a sprinkle of parmesan, and a hint of olive oil.
INGREDIENTS
5 oz Chicken Breast
1/3 cup Whole Wheat Breadcrumbs
1 tbsp Mixed Fresh Herbs
2 cups Romaine Lettuce
1 tbsp Light Caesar Dressing
1 tbsp Grated Parmesan Cheese
1 tsp Olive Oil
PREPARATION
Preheat your oven to 425°F.
Pat the chicken breast dry and season lightly with salt and pepper. In a shallow bowl, combine the whole wheat breadcrumbs with the mixed fresh herbs.
Press the chicken breast into the breadcrumb mixture to coat evenly on both sides.
Place the coated chicken on a lightly greased baking sheet and bake in the preheated oven for 20-25 minutes or until the internal temperature reaches 165°F. Once done, let it rest for a few minutes before slicing.
While the chicken is baking, wash and chop the romaine lettuce. In a large bowl, toss the lettuce with the light Caesar dressing, olive oil, and grated parmesan cheese.
Slice the herb-crusted chicken into strips and place on top of the crispy romaine. Serve immediately.
