100g extra firm tofu
1 cup cauliflower rice (approx 107g)
1 tsp turmeric powder
1 medium diced tomato
1/4 medium yellow onion, chopped
2 cloves garlic, minced
1 tsp fresh ginger, minced
1 tsp olive oil
1 tsp cumin powder
1 tsp paprika
Salt and black pepper to taste
PREPARATION
Rinse the dry lentils thoroughly and place them in a pot with water. Bring to a boil, then reduce heat and simmer until tender, about 20-25 minutes. Drain any excess water.
While the lentils are cooking, heat the olive oil in a large pan over medium heat. Add the chopped onion, minced garlic, and fresh ginger, and sauté until the onion becomes translucent.
Stir in the diced tomato, cumin powder, paprika, and half of the turmeric powder. Cook for another 2 minutes to release the spices’ aroma.
Add the cooked lentils and the extra firm tofu (cubed) into the pan. Season with salt and black pepper, and let the mixture simmer for 5-7 minutes so the flavors meld together.
