PREPARATION
Preheat your oven to 425°F.
Process the cauliflower in a food processor until it reaches a rice-like texture. Microwave the cauliflower rice for 5-7 minutes or steam until tender, then let it cool.
Once cooled, mix the cauliflower with one beaten egg and the shredded mozzarella cheese in a bowl. Season lightly with salt and pepper if desired.
Press the cauliflower mixture onto a parchment-lined baking sheet, forming a thin, even crust. Bake in the preheated oven for 12-15 minutes until the edges start to turn golden and the crust is firm.
