INGREDIENTS
7 oz Salmon Fillet
1 cup Green Beans
1 cup Cauliflower
1 tsp Olive Oil
1 clove Garlic
Salt & Pepper to taste
PREPARATION
Pat the salmon dry and season both sides lightly with salt and pepper.
Heat olive oil in a non-stick skillet over medium-high heat.
Place the salmon filet skin-side down (if applicable) and sear for about 3-4 minutes per side until a golden crust forms and the center reaches your desired doneness.
While the salmon cooks, steam the green beans in lightly salted water for 4-5 minutes until tender-crisp.
In a separate pot, steam the cauliflower florets for about 8-10 minutes until very soft.
Drain the cauliflower and transfer to a bowl. Add the minced garlic, a pinch of salt and pepper, and mash until smooth, adding a small splash of water if needed.
Toss the steamed green beans with a bit of extra minced garlic and a dash of salt for extra flavor.
Plate the seared salmon alongside a serving of garlic green beans and a generous scoop of cauliflower mash.
