PREPARATION
Preheat your oven to 400°F (200°C).
Wash the sweet potato and dice it into 1-inch cubes. Toss the cubes with half of the maple syrup, a pinch of salt, half the rosemary and thyme, and a crushed garlic clove.
Spread the sweet potato cubes evenly on a baking sheet lined with parchment paper. Roast them in the oven for 25-30 minutes until tender and lightly caramelized.
