INGREDIENTS
7 oz Salmon Fillet
1/2 cup Asparagus
3/4 cup Cauliflower
1 tsp Olive Oil (for salmon)
1 tsp Olive Oil (for asparagus)
1 tbsp Lemon Juice
Salt & Pepper to taste
PREPARATION
Pat the salmon dry and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat and add 1 teaspoon of olive oil. Once hot, place the salmon fillet skin-side down and sear for about 3-4 minutes until a golden crust forms.
Flip the salmon and cook for an additional 3-4 minutes until cooked through but still moist. Squeeze a little lemon juice over the top and remove from the skillet.
While the salmon is cooking, steam the asparagus until tender, about 3-5 minutes. Toss with 1 teaspoon of olive oil, salt, and pepper.
For the cauliflower mash, steam the cauliflower florets until very soft (about 8-10 minutes). Transfer to a blender or food processor, add a splash of lemon juice, salt, and pepper, and blend until smooth and creamy.
Plate the seared salmon alongside the steamed asparagus and a serving of cauliflower mash. Serve immediately with an extra drizzle of lemon juice if desired.
