Seared Salmon with Steamed Asparagus and Cauliflower Mash
Enjoy a beautifully seared salmon paired with tender steamed asparagus and a creamy cauliflower mash enriched with a touch of nonfat Greek yogurt and olive oil. This dish is both flavorful and balanced, offering a satisfying mix of textures and a fresh lemon finish.
INGREDIENTS
6 oz Salmon Fillet
6 Asparagus Spears
1 cup Cauliflower
1/3 cup Nonfat Greek Yogurt
3 teaspoons Olive Oil
1 Lemon wedge
Salt and Pepper (to taste)
PREPARATION
Season the salmon fillet with salt and pepper.
Heat a non-stick skillet over medium-high heat and add 1 teaspoon of olive oil. Once hot, sear the salmon skin-side down for about 3-4 minutes, then flip and cook for another 3 minutes until just cooked through.
Meanwhile, steam the asparagus in a steamer or a covered pan with a bit of water until tender, about 4-5 minutes.
For the cauliflower mash, steam or boil the cauliflower until fork-tender, about 8-10 minutes. Transfer to a bowl, add nonfat Greek yogurt and the remaining olive oil. Season with salt and pepper and mash until smooth.
Plate the seared salmon alongside the steamed asparagus and a generous serving of the cauliflower mash. Squeeze a lemon wedge over the salmon and serve immediately.
