Savor a perfectly pan-seared chicken breast infused with garlic and fresh herbs, paired with crispy roasted broccoli drizzled in olive oil. This dish balances lean protein and vibrant veggies to offer a nutritious, satisfying meal that is both light and flavorful.
INGREDIENTS
6 oz Chicken Breast
1 tsp Olive Oil (for pan-sear)
2 tsp Olive Oil (for broccoli)
1 cup Broccoli
1 clove Garlic
1 tbsp Fresh Mixed Herbs
Salt and Black Pepper, to taste
PREPARATION
Preheat oven to 425°F.
Toss the broccoli with 2 teaspoons olive oil, a pinch of salt, and black pepper. Spread them on a baking sheet.
Roast the broccoli in the oven for 15-20 minutes until tender with slightly crisp edges.
While broccoli roasts, pat the chicken breast dry and season both sides with salt, pepper, and chopped fresh herbs.
Heat 1 teaspoon olive oil in a skillet over medium-high heat.
Add minced garlic to the skillet and sauté for about 30 seconds until fragrant.
Place the chicken breast in the skillet and cook for about 5-6 minutes per side until golden brown and the internal temperature reaches 165°F.
Once cooked, remove the chicken from the skillet and let it rest for a couple of minutes.
Plate the chicken with the roasted broccoli on the side and garnish with any remaining fresh herbs if desired.
