INGREDIENTS
6 ounces Chicken Breast
1 cup Broccoli
1 tablespoon Extra Virgin Olive Oil
2 cloves Garlic
1 teaspoon Fresh Mixed Herbs (Thyme & Rosemary)
1 tablespoon Lemon Juice
Salt and Black Pepper to taste
PREPARATION
Preheat your oven to 425°F for roasting the broccoli.
Toss the broccoli with half of the olive oil, a pinch of salt, and pepper. Spread on a baking sheet and roast for 15-20 minutes until tender and slightly crispy.
Meanwhile, pat the chicken breast dry and season with salt, pepper, and the fresh mixed herbs.
Heat the remaining olive oil in a skillet over medium-high heat. Add minced garlic and sauté for about 30 seconds.
Place the chicken breast in the skillet and sear for 4-5 minutes on each side until golden brown and cooked through.
Squeeze lemon juice over the chicken once it’s off the heat.
Plate the chicken alongside the roasted broccoli and serve immediately.
