1/4 cup Chickpeas (40g)
6 oz Extra-Firm Tofu (170g)
1/4 medium Red Bell Pepper (40g)
1/4 medium Carrot (30g)
1/4 medium Cucumber (30g)
1/2 cup Red Cabbage (35g)
1 cup Baby Spinach (30g)
PREPARATION
Press the extra-firm tofu to remove excess moisture, then slice into strips.
Heat a non-stick skillet over medium-high heat and lightly sauté the tofu strips until golden on all sides, about 5-7 minutes. Season with a pinch of salt and pepper if desired.
While the tofu cooks, wash and julienne the red bell pepper, carrot, cucumber, and red cabbage. Rinse the baby spinach and set aside.
