This dish boasts a balanced blend of protein and low-calorie goodness, making it an ideal meal whether for breakfast, lunch, or dinner.
INGREDIENTS
1 medium Sweet Potato (approx 114g)
4 large Eggs
3 ounces Turkey Sausage, sliced
1/2 medium Red Bell Pepper, diced
1/4 medium Red Onion, diced
1 cup Fresh Spinach
1 teaspoon Olive Oil
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F. Peel and dice the sweet potato into small cubes.
Place the sweet potato cubes on a baking sheet, drizzle with half the olive oil, and season with salt and pepper. Roast in the oven for 20-25 minutes until tender and lightly crisped.
While the sweet potato roasts, heat a non-stick skillet over medium heat and add the remaining olive oil. Sauté the diced red bell pepper and red onion until softened, about 3-4 minutes.
Add the sliced turkey sausage to the skillet and cook for an additional 3-4 minutes until lightly browned.
Stir in the fresh spinach and allow it to wilt, about 1-2 minutes.
In a separate pan, cook the eggs to your preference (fried or scrambled work well).
Once the sweet potatoes are done, fold them into the skillet mixture. Taste and adjust seasoning if needed.
Plate the hash and top with the cooked eggs. Serve immediately and enjoy your protein-packed meal!
