INGREDIENTS
5 oz Mahi Mahi Fillet
1/4 cup crushed Pistachios
1/2 medium Mango, diced
1/4 cup diced Red Bell Pepper
1 tbsp diced Red Onion
2 tbsp chopped Fresh Cilantro
2 tbsp Lime Juice
1 tsp Olive Oil
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F.
Pat the mahi mahi fillet dry with paper towels and season lightly with salt and pepper.
Place the crushed pistachios on a small plate. Brush the top surface of the fish with olive oil, then press the pistachios firmly onto the oiled side to create a crust.
Heat a non-stick, oven-safe skillet over medium-high heat. Once hot, place the fish crust-side down and sear for about 2 minutes until the crust is golden.
Carefully flip the fish and transfer the skillet to the oven. Bake for an additional 6-8 minutes until the fish is just cooked through.
While the fish is baking, prepare the mango salsa by combining the diced mango, red bell pepper, red onion, and chopped cilantro in a bowl. Drizzle with lime juice, add a pinch of salt, and stir gently.
Once the fish is done, remove it from the oven and plate it. Top with a generous spoonful of the fresh mango salsa.
Serve immediately and enjoy the vibrant mix of flavors and textures.
