Enjoy a beautifully balanced dinner featuring a perfectly seared salmon fillet accompanied by crisp garlic green beans and a smooth, herbed sweet potato mash. This dish offers a delightful blend of savory and slightly sweet flavors with a fresh, aromatic finish.
INGREDIENTS
5 oz Salmon Fillet
1/2 medium Sweet Potato (mashed)
1 cup Green Beans
1.5 tsp Olive Oil (for green beans)
1 tsp Olive Oil (for mash)
2 cloves Garlic
Salt & Pepper to taste
PREPARATION
Season the salmon fillet with salt and pepper. Preheat a non-stick skillet over medium-high heat.
Sear the salmon for about 3-4 minutes per side until the exterior is nicely golden and the fish reaches your desired doneness.
While the salmon is cooking, peel and chop the half medium sweet potato into cubes. Boil in lightly salted water until tender, about 10-12 minutes.
Drain the sweet potato and mash it with 1 teaspoon of olive oil, salt, and pepper until smooth and creamy.
In another pan, heat 1.5 teaspoons olive oil over medium heat. Add two minced garlic cloves and sauté briefly until fragrant.
Add the green beans and cook for about 4-5 minutes until they are tender-crisp, tossing to coat with the garlic-infused oil. Season with salt and pepper.
Plate the seared salmon alongside a generous serving of garlic green beans and a scoop of sweet potato mash. Serve immediately.
