200g Extra Firm Tofu
1 Large Egg
0.5 cup Shelled Edamame (Frozen)
150g Cauliflower Rice
100g Kimchi
1 tbsp Sesame Oil
1 tbsp Soy Sauce
2 cloves Garlic, minced
2 tbsp Green Onions, chopped
1 tsp Sesame Seeds
PREPARATION
Drain the tofu and press gently with a paper towel to remove excess moisture. Cut tofu into small cubes.
Heat sesame oil in a non-stick skillet over medium-high heat. Once hot, add the tofu cubes and sear them until they are golden and crispy on all sides. Remove tofu and set aside.
In the same skillet, add minced garlic and sauté until fragrant, about 30 seconds.
Add the cauliflower rice and shelled edamame to the skillet. Stir-fry for about 3-4 minutes, allowing the cauliflower to become tender and slightly crispy.
Push the rice mixture to the side of the pan and crack the egg into the space, scrambling it gently until just set.
Mix the tofu back into the pan along with the kimchi and soy sauce, stirring to combine all ingredients well.
