PREPARATION
Preheat your oven to 400°F (200°C).
On a lightly floured surface, gently roll out the puff pastry if needed and cut a square or rectangle to form the base.
In a bowl, combine the low-fat ricotta cheese, fresh spinach, diced red onion, and freshly chopped herbs. Season with salt and pepper to taste.
