INGREDIENTS
100g Firm Tofu
150g Broccoli
50g Shelled Edamame
30g Unflavored Soy Protein Isolate (1 scoop)
0.5 tbsp Cornstarch
1 tbsp Low-Sodium Soy Sauce
1 tsp Fresh Minced Ginger
1 clove Garlic (minced)
Non-Stick Cooking Spray
PREPARATION
Press the tofu to remove excess moisture, then cut it into bite-sized cubes.
In a small bowl, toss the tofu cubes with cornstarch until evenly coated.
Preheat a non-stick skillet over medium-high heat and lightly spritz with cooking spray. Fry the tofu cubes until they become golden and crispy on all sides; remove from the skillet and set aside.
In the same skillet, add a little extra cooking spray if needed. Sauté the minced garlic and ginger for about 30 seconds until fragrant.
Add the broccoli and edamame to the skillet. Stir-fry for 3-4 minutes until the veggies are bright green and just tender.
Dissolve the unflavored soy protein isolate in 1-2 tablespoons of water to create a light sauce, then add it along with the low-sodium soy sauce to the skillet. Toss the vegetables to coat them evenly.
Return the crispy tofu to the skillet and gently mix everything together until well combined and heated through.
Serve immediately for a warm, protein-packed, and refreshingly crisp stir fry.
