PREPARATION
Preheat your oven to 425°F for roasting the baby potatoes.
Wash the baby potatoes and toss them with a small drizzle of olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 20-25 minutes until golden and crisp.
While the potatoes roast, pat the steak dry with paper towels. Season both sides generously with salt and pepper.
