PREPARATION
Preheat a non-stick skillet over medium-high heat and season the salmon fillet with salt and pepper.
Meanwhile, prick the sweet potato with a fork and roast it in an oven preheated to 400°F for about 40-45 minutes until tender, or microwave until soft if short on time.
In a small saucepan, warm the butter and mash the roasted sweet potato with a fork until smooth. Adjust seasoning as needed.
