Enjoy a creative spin on pizza with a crisp, flavorful cauliflower crust topped with a rich tomato sauce, gooey part-skim mozzarella, and savory turkey pepperoni. This dish delivers a satisfying balance of protein and wholesome ingredients while keeping carbs in check.
INGREDIENTS
200g Cauliflower, raw
1 Egg, whole
1/2 cup grated Mozzarella Cheese (Part-Skim)
40g Turkey Pepperoni
1/4 cup Tomato Sauce
50g Red Bell Pepper, sliced
1 tsp Dried Oregano
PREPARATION
Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
Break the cauliflower into florets and pulse in a food processor until fine. Lightly steam or microwave for 5 minutes until slightly tender. Let cool and then wrap in a clean kitchen towel to squeeze out excess moisture.
In a bowl, combine the cauliflower, egg, and half of the grated mozzarella cheese. Mix well until a dough forms.
Transfer the mixture to the prepared baking sheet and press out into a circular crust about 1/4-inch thick.
Bake the crust in the preheated oven for 15 minutes until it starts to set and turn lightly golden.
Remove the crust from the oven. Spread the tomato sauce evenly over the crust, sprinkle the remaining mozzarella, then evenly distribute the turkey pepperoni and sliced red bell pepper on top. Sprinkle dried oregano for extra flavor.
Return the pizza to the oven and bake for an additional 8-10 minutes, or until the cheese is melted and bubbly.
Remove from the oven, let cool slightly, slice, and serve warm.
