This dish offers a balanced mix of protein, complex carbohydrates, and a spicy kick to kickstart your meal.
INGREDIENTS
3 oz Lean Steak (Top Sirloin)
1 Whole Wheat Tortilla
1/2 medium Red Bell Pepper
1/4 medium Yellow Onion
1/4 cup Reduced Fat Cheddar Cheese, shredded
1 tsp Chili Powder
1 tsp Cumin
Salt & Pepper to taste
PREPARATION
Season the steak with chili powder, cumin, salt, and pepper.
Grill or pan-sear the steak over medium-high heat for 3-4 minutes per side or until desired doneness. Let rest for a few minutes before slicing thinly.
While the steak rests, heat a non-stick skillet over medium heat and lightly sauté sliced red bell pepper and onion until softened, about 3-4 minutes.
Lay the whole wheat tortilla flat and sprinkle half of the shredded cheese on one side.
Layer the sliced steak and sautéed vegetables evenly over the cheese, then top with the remaining cheese.
Fold the tortilla over to enclose the filling and place back in the skillet. Cook each side for about 2-3 minutes until the tortilla is golden and the cheese is melted.
Remove from heat, slice into wedges, and serve warm.
