INGREDIENTS
4 oz Salmon Fillet
1 cup Broccoli (chopped)
1/4 cup Chickpeas (rinsed and drained)
1 tsp Olive Oil
1 tbsp Fresh Herbs (Parsley, Thyme, or Dill)
1 Garlic Clove
PREPARATION
Preheat your oven to 425°F (220°C). Rinse the broccoli and chickpeas, and pat them dry.
In a small bowl, mix the chopped fresh herbs with minced garlic. Reserve half of the mixture to top the salmon.
Place the salmon fillet on a lined baking sheet. Brush lightly with a little olive oil and press half of the herb and garlic mixture onto the top of the salmon to create a crust.
On a separate section or baking tray, toss the broccoli and chickpeas with the remaining olive oil, salt, and pepper to taste.
Place both the salmon and the vegetable mixture in the oven. Roast the broccoli and chickpeas for about 20 minutes or until the chickpeas turn crispy and the broccoli is tender with some charred edges.
Bake the salmon for approximately 12-15 minutes, depending on thickness, until it flakes easily with a fork.
Remove all items from the oven and transfer to plates. Optionally, sprinkle a little extra fresh herbs on top for added flavor and presentation. Serve immediately.
