INGREDIENTS
7 egg whites
1 cup fresh spinach
1/2 medium red bell pepper
1/4 small yellow onion
1/4 cup shredded low-fat cheddar cheese
1.5 tbsp olive oil
2 tbsp chopped fresh mixed herbs
Salt and Pepper to taste
PREPARATION
Preheat your oven to 375°F.
Lightly spray an oven-safe skillet with olive oil or add a portion of the olive oil and heat over medium heat.
Sauté the chopped onion and red bell pepper in the skillet until they become soft, about 3-4 minutes.
Add the fresh spinach and mixed herbs, stirring until the spinach wilts, for about 1-2 minutes.
In a bowl, whisk the egg whites with a pinch of salt and pepper.
Pour the egg whites evenly over the sautéed vegetables in the skillet. Allow the eggs to settle for a minute.
Sprinkle the shredded low-fat cheddar evenly on top.
Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the egg whites are set and the cheese is slightly melted.
Remove from the oven and let it cool for a couple minutes before slicing and serving.
