INGREDIENTS
7 ounces Salmon Fillet
1.5 cups Asparagus Spears
1 tbsp Olive Oil
1 medium Sweet Potato
1 tsp Butter
1/4 cup Skim Milk
2 cloves Garlic
Salt and Pepper to taste
PREPARATION
Pat dry the salmon fillet with a paper towel and season both sides with salt and pepper.
Preheat a non-stick skillet over medium-high heat. Add half of the olive oil.
Once the oil is hot, place the salmon fillet skin side down and sear for about 3-4 minutes until the skin gets crispy, then flip and cook for an additional 3-4 minutes until the salmon is cooked through.
Meanwhile, peel and cube the sweet potato. Boil the cubes in a pot of water until tender, about 10-12 minutes.
In another pan, heat the remaining olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
Add the asparagus to the pan and sauté for 4-5 minutes until they are tender-crisp. Season lightly with salt and pepper.
Drain the sweet potato and return it to the pot. Add butter and skim milk, then mash until smooth. Adjust seasoning with salt and pepper as needed.
Plate by serving the seared salmon alongside a generous helping of sweet potato mash and sautéed asparagus. Enjoy!
