INGREDIENTS
4 slices Turkey Bacon (112g)
2 large Romaine Lettuce leaves (70g)
1/2 cup Nonfat Greek Yogurt (120g)
1 tsp Extra Virgin Olive Oil (4.5g)
2 tbsp Fresh Herbs (Parsley & Dill, 8g)
1 clove Garlic (3g)
1 tsp Lemon Juice (5g)
1 large Egg, poached (50g)
Salt & Pepper to taste
PREPARATION
Prepare the herb aioli by combining the nonfat Greek yogurt, extra virgin olive oil, chopped fresh herbs, minced garlic, lemon juice, salt, and pepper in a small bowl. Mix until well combined and set aside.
Cook the turkey bacon in a skillet over medium heat until it is crispy, about 4-5 minutes per side. Remove and drain on paper towels.
Gently wash and pat dry the romaine lettuce leaves. Arrange them on a serving plate as the base of the stack.
Layer the crispy turkey bacon on top of the lettuce leaves.
Top the bacon with a perfectly poached egg, then drizzle the herb aioli over the stack.
Season with a pinch of salt and freshly ground pepper, and serve immediately.
