1 medium Sweet Potato (130g)
1.5 tsp Extra Virgin Olive Oil (7.5g)
1 Garlic Clove
2 sprigs Fresh Thyme
2 sprigs Fresh Rosemary
Salt and Black Pepper to taste
PREPARATION
Preheat the oven to 400°F.
Peel and cube the sweet potato. Toss with a portion of the olive oil, salt, and pepper.
Spread the sweet potato cubes on a baking sheet and roast for 25-30 minutes until tender.
While the sweet potato roasts, pat dry the chicken breast and season both sides with salt, pepper, minced garlic, and finely chopped thyme and rosemary.
Heat the remaining olive oil in a skillet over medium-high heat.
