1 cup Cherry Tomatoes (150g)

1 tbsp Hemp Seeds (10g)
2 tsp Olive Oil (9g)
1 tbsp Lemon Juice (15g)
2 tbsp Fresh Basil
Salt & Pepper to taste
PREPARATION
- Preheat your oven to 400°F (200°C). 
- Place the cherry tomatoes in a small bowl and drizzle with olive oil, then season lightly with salt and pepper. 
- Spread the tomatoes on a baking sheet lined with parchment paper and roast in the oven for about 12-15 minutes, until they begin to blister and soften. 
- While the tomatoes are roasting, prepare a bowl by adding the low-fat cottage cheese and shelled edamame. 
- Once the tomatoes are done, remove them from the oven and allow them to cool slightly before folding into the cottage cheese mixture. 
- Drizzle the lemon juice over the bowl, sprinkle with hemp seeds, and add fresh basil.
