INGREDIENTS
7 oz Salmon Fillet
1 cup Green Beans
1 tsp Olive Oil (for green beans)
1 cup Cauliflower
1/4 cup Unsweetened Almond Milk
1 tsp Butter
1 tsp Olive Oil (for cauliflower mash)
2 cloves Garlic
Salt and Pepper to taste
PREPARATION
Season the salmon fillet with salt and pepper.
Heat a non-stick skillet over medium-high heat. Once hot, sear the salmon skin-side down for about 4-5 minutes, then flip and cook for another 3-4 minutes until cooked to your desired doneness.
While the salmon cooks, steam the green beans until tender-crisp. In a separate pan, heat 1 teaspoon of olive oil and add one minced garlic clove, sautéing briefly before tossing in the green beans. Season lightly with salt and pepper.
For the cauliflower mash, steam the cauliflower florets until very tender. Transfer to a blender or food processor, add the unsweetened almond milk, 1 teaspoon butter, 1 teaspoon olive oil, and the remaining minced garlic. Blend until smooth, and season with salt and pepper to taste.
Plate the seared salmon alongside a serving of garlic green beans and a generous dollop of cauliflower mash. Serve immediately.
