INGREDIENTS
7 oz Salmon Fillet (198g)
1 cup Green Beans (125g)
1 tsp Olive Oil (5g)
2 cloves Garlic
1 cup Mashed Cauliflower (124g)
Salt and Pepper to taste
PREPARATION
Pat the salmon fillet dry and season with salt and pepper.
Heat a non-stick skillet over medium-high heat and add half of the olive oil.
Place the salmon skin-side down (if applicable) and sear for about 3-4 minutes per side until a golden crust forms and the inside reaches your desired doneness.
While the salmon is cooking, trim the ends off the green beans.
In a separate pan, heat the remaining olive oil over medium heat, add minced garlic, and sauté for about 30 seconds until fragrant.
Add the green beans to the pan, toss to coat in the garlic oil, and sauté for 4-5 minutes until they are tender-crisp. Season with salt and pepper.
Steam or boil cauliflower florets until very tender, then mash with a fork or blender until smooth. Season with salt and pepper.
Plate the seared salmon alongside a serving of garlic green beans and a scoop of creamy mashed cauliflower. Serve warm.
