1 medium Sweet Potato (150g)
2 large Eggs
2 large Egg Whites
1 serving Turkey Sausage (85g)
1 cup Spinach (30g)
1/2 Red Bell Pepper (50g)
1 teaspoon Olive Oil
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C). Peel and dice the sweet potato into small cubes.
Toss the sweet potato cubes with olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 20-25 minutes until tender and lightly caramelized.
While the sweet potatoes roast, dice the red bell pepper and roughly chop the spinach. Slice the turkey sausage into rounds.
In a non-stick skillet over medium heat, add the turkey sausage slices and sauté until they start to brown. Add the red bell pepper and spinach, stirring until the spinach wilts slightly.
In a bowl, beat the eggs and egg whites with a pinch of salt and pepper. Push the veggie-sausage mixture to the side of the skillet and pour the eggs into the cleared space. Scramble the eggs until softly set and then mix together with the rest of the ingredients.
