100g Shelled Edamame
1 medium Red Bell Pepper
1 cup Broccoli

2 cloves Garlic, minced
2 tbsp Low-Sodium Soy Sauce
1 tbsp Rice Vinegar
PREPARATION
Press the extra firm tofu between paper towels for at least 15 minutes to remove excess moisture, then cut it into 1-inch cubes.
In a bowl, toss the tofu cubes with half of the minced garlic, grated ginger, and a splash of low-sodium soy sauce. Let it marinate for 10 minutes.
Heat a non-stick skillet over medium-high heat and lightly spray it with cooking spray or a small amount of oil. Add the tofu cubes and stir-fry until they are crispy and golden on all sides, about 8-10 minutes.
While the tofu cooks, prepare the stir-fried vegetables. Slice the red bell pepper into strips, cut broccoli into bite-sized florets, and julienne the carrot.
In another pan or after removing tofu, add the remaining garlic and a drizzle of oil, then quickly stir-fry the vegetables over high heat for about 4-5 minutes until they are tender yet crisp.
