INGREDIENTS
5 oz Shrimp
2 medium Zucchinis (spiralized)
0.5 tbsp Olive Oil
0.25 cup Cherry Tomatoes
0.25 cup Red Bell Pepper
1 oz Feta Cheese
2 cloves Garlic
1 tbsp Lemon Juice
2 tbsp Fresh Herbs (Basil/Parsley)
PREPARATION
Preheat your oven to 425°F.
Toss spiralized zucchini noodles with 0.5 tablespoon of olive oil, a pinch of salt and pepper, and a drizzle of lemon juice on a baking sheet.
Roast the zucchini noodles in the oven for 10-12 minutes until they are tender and slightly crisp.
While the noodles are roasting, heat a non-stick skillet over medium heat and add a little olive oil. Sauté minced garlic for about 30 seconds until fragrant.
Add the shrimp to the skillet and cook for 2-3 minutes per side until they turn pink and opaque.
Stir in cherry tomatoes and red bell pepper slices just to warm through for an additional 1-2 minutes.
Remove the zucchini noodles from the oven and transfer them to a serving plate. Top with the garlic shrimp mixture.
Drizzle with lemon juice, sprinkle crumbled feta cheese and fresh herbs over the top, and finish with a dash of salt and pepper to taste.
