100g Asparagus Spears
150g Cauliflower
1 tsp Olive Oil
Salt and Pepper to taste
PREPARATION
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat and add the olive oil.
Once the oil is shimmering, place the salmon fillet skin-side down and sear for about 3-4 minutes until the skin is crispy.
Flip the salmon and cook for an additional 3-4 minutes or until the fish is just cooked through.
Meanwhile, steam the asparagus in a steamer or in a covered pan with a splash of water for about 4-5 minutes until tender-crisp.
For the cauliflower mash, steam or boil the cauliflower florets until very soft, about 10 minutes, then transfer them to a bowl and mash until smooth. Season with salt and pepper to taste.
