INGREDIENTS
6 oz Salmon Fillet
1 cup Asparagus
1.5 cups Cauliflower
1 tbsp Olive Oil
1 clove Garlic
1 tbsp Lemon Juice
Salt and Pepper to taste
PREPARATION
Pat the salmon dry and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat and add half of the olive oil. Sear the salmon for about 3-4 minutes per side, or until it reaches desired doneness.
Meanwhile, steam the asparagus in a steamer or a covered pan with a splash of water for about 4-5 minutes until tender crisp.
In a small saucepan, steam the cauliflower florets with the garlic clove for about 8-10 minutes until the cauliflower is soft.
Once the cauliflower and garlic are tender, transfer them to a blender or use a potato masher, add the remaining olive oil and lemon juice. Blend or mash until smooth and creamy. Season with salt and pepper.
Plate the seared salmon alongside a serving of steamed asparagus and a generous scoop of garlic cauliflower mash. Serve immediately.
