INGREDIENTS
8 oz Salmon Fillet
1/2 cup cooked Brown Rice
1 cup Green Beans
2 tsp Olive Oil
2 cloves Garlic
1 tbsp Lemon Juice
Salt & Pepper to taste
PREPARATION
Pat the salmon dry and season both sides with salt and pepper.
Heat 1 tsp of olive oil in a non-stick skillet over medium-high heat. Once hot, add the salmon skin-side down and sear for about 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 3-4 minutes until the fish is just cooked through. Drizzle with lemon juice in the last minute.
Meanwhile, steam or boil the green beans for 3-4 minutes until tender but still crisp. Drain if necessary.
In a separate small pan, heat the remaining 1 tsp olive oil over medium heat. Add minced garlic and sauté briefly until aromatic, then toss in the cooked green beans to help coat and flavor them.
Prepare the brown rice as per package instructions if not already cooked.
Plate the brown rice, top with the seared salmon, and arrange the garlic green beans on the side. Serve immediately for a warm, balanced meal.
