Enjoy a savory fusion of tender roasted mushrooms and juicy chicken breast, enveloped in a luscious garlic-butter sauce and finished with a burst of fresh herbs. This dish offers a delightful balance of flavors and textures, perfect for a nourishing meal at any time of the day.
INGREDIENTS
4 ounces Chicken Breast
2 cups Mushrooms
1.5 tbsp Unsalted Butter
2 cloves Garlic
1 tbsp Fresh Mixed Herbs (Parsley & Thyme)
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C).
Rinse and pat dry the chicken breast and mushrooms. Slice the mushrooms if large; leave small ones whole.
Melt the butter in a small saucepan over low heat. Add minced garlic and allow it to cook for a minute until fragrant, taking care not to burn it.
Place the chicken breast and mushrooms on a baking tray lined with parchment paper. Drizzle the garlic butter evenly over the chicken and mushrooms.
Season with salt and pepper, and sprinkle the fresh mixed herbs over the top.
Roast in the oven for about 18-20 minutes, or until the chicken is fully cooked (internal temperature of 165°F) and the mushrooms are tender with slightly browned edges.
Remove from the oven and let it rest for a few minutes before serving.
