INGREDIENTS
4 oz Chicken Breast
2 oz Whole Wheat Pasta (dry)
1 medium Red Bell Pepper
1 tsp Olive Oil
1/4 cup Nonfat Greek Yogurt
1 tsp Cajun Seasoning
1 clove Garlic
PREPARATION
- Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
- Season the chicken breast with Cajun seasoning on both sides.
- Heat olive oil in a pan over medium heat and add minced garlic. Sauté until fragrant.
- Add the seasoned chicken to the pan and cook for about 4-5 minutes per side or until fully cooked and no longer pink. Remove the chicken and slice it into strips.
- In the same pan, add sliced red bell pepper and sauté until tender, about 3-4 minutes.
- Return the chicken to the pan, then stir in the cooked pasta.
- Lower the heat and mix in the nonfat Greek yogurt to create a creamy sauce that lightly coats the pasta and chicken. Stir well to combine and warm through.
- Adjust seasoning with extra Cajun spice if desired and serve warm.
