1.5 cups Cauliflower Florets (150g)
1 cup Green Beans (125g)
1.5 tbsp Extra Virgin Olive Oil (22.5g)
1/4 Lemon
2 tbsp Fresh Parsley
2 tbsp Fresh Dill
Salt & Pepper to taste
PREPARATION
Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
Rinse the cod fillet and pat dry. Drizzle a little olive oil, squeeze half of the 1/4 lemon over it, and season with salt, pepper, chopped parsley, and dill.
Place the seasoned cod on the prepared baking sheet and bake in the preheated oven for 12-15 minutes until the fish is opaque and flakes easily.
While the cod is baking, steam the cauliflower florets until very tender (about 8-10 minutes). Transfer them to a bowl.
