INGREDIENTS
5 oz Chicken Breast
1 cup Cauliflower Rice
1 medium Red Bell Pepper
0.5 cup Broccoli
1 small Carrot
0.25 cup Onion
2 cloves Garlic
1 teaspoon Ginger
1 tbsp Sesame Oil
1 tbsp Low Sodium Soy Sauce
PREPARATION
- If not pre-riced, pulse cauliflower in a food processor until it resembles rice consistency.
- Thinly slice the red bell pepper, carrot, and onion. Cut broccoli into small florets.
- Dice the chicken breast into bite-sized pieces.
- Heat sesame oil in a large skillet or wok over medium-high heat. Add garlic and ginger, stir-fry for about 30 seconds until fragrant.
- Add the chicken pieces and stir-fry until they are cooked through and lightly browned, about 5-7 minutes.
- Toss in the red bell pepper, broccoli, carrot, and onion. Stir-fry for 3-4 minutes until vegetables are tender but still crisp.
- Add the cauliflower rice and soy sauce to the skillet. Stir well and cook for an additional 2-3 minutes until heated through.
- Taste and adjust seasonings if necessary, then serve hot.
