INGREDIENTS
150g Chicken Breast
1 cup Broccoli
1 tbsp Sesame Seeds
1 tsp minced Fresh Ginger
1 clove minced Garlic
1 tbsp Low Sodium Soy Sauce
1 tsp Rice Vinegar
1 tsp Honey
1 tsp Cornstarch
1 tsp Olive Oil
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a small bowl, whisk together the minced ginger, minced garlic, low sodium soy sauce, rice vinegar, honey, and olive oil.
Pat the chicken breast dry and place it in a shallow dish. Pour half of the marinade over the chicken, ensuring it’s well coated. Let it marinate for at least 15-20 minutes.
In a separate small bowl, combine the cornstarch with a bit more of the marinade (if needed) to make a thin coating. Lightly toss the marinated chicken in the cornstarch mixture to ensure an even, crispy coating.
Place the chicken breast on the prepared baking sheet. Arrange the broccoli florets around the chicken. Drizzle any remaining marinade over the broccoli.
Sprinkle sesame seeds evenly over the chicken and broccoli.
Bake in the preheated oven for 20-25 minutes or until the chicken is cooked through (internal temperature of 165°F) and the broccoli is tender with slight crisp edges.
Remove from the oven and let it rest for a few minutes before slicing the chicken. Serve warm and enjoy!
