INGREDIENTS
200g Shrimp, peeled & deveined
1 medium Zucchini (approx. 196g)
1 tbsp Olive Oil
2 cloves Garlic
2 tbsp Lemon Juice
2 tbsp Fresh Parsley, chopped
Salt & Pepper to taste
PREPARATION
Pat the shrimp dry and season lightly with salt and pepper.
Heat olive oil in a non-stick skillet over medium-high heat.
Add minced garlic to the skillet and sauté for 30 seconds until fragrant.
Place the shrimp in the skillet and sear for about 2 minutes on each side, or until pink and opaque.
Remove shrimp from the skillet and set aside.
Slice the zucchini into half-moons. In the same skillet, add the zucchini and sauté for about 4-5 minutes until tender with a slight crisp edge. Season with salt and pepper.
Return the shrimp to the skillet, drizzle with lemon juice, and toss gently to combine with the zucchini.
Sprinkle chopped fresh parsley over the dish, adjust seasoning if needed, and serve immediately.
