INGREDIENTS
1.75 oz Salmon Fillet (approx. 50g)
1 large Egg White (approx. 33g)
0.75 cup cooked Brown Rice (approx. 150g)
0.5 cup Green Beans (approx. 50g)
1 tsp Olive Oil
1 clove Garlic
Salt & Pepper to taste
PREPARATION
Season the salmon lightly with salt and pepper. Set aside.
Prepare the brown rice if not already cooked. Measure 0.75 cup of cooked brown rice and keep warm.
Blanch or steam the green beans until tender-crisp, about 3-4 minutes, then shock in ice water to maintain color.
In a small skillet, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
Add the green beans to the skillet and toss to coat in the garlic oil. Sauté for another 2 minutes, then season with a pinch of salt and pepper.
Meanwhile, in a separate nonstick pan over medium-high heat, sear the salmon for 2-3 minutes per side until lightly golden and just cooked through.
In the last minute of cooking, add the egg white to the pan with the salmon, letting it gently cook and adhere as a delicate accent.
Plate the brown rice as a base, top with the seared salmon and the cooked egg white accent, then arrange the garlic green beans on the side.
Finish with an extra light sprinkle of salt and pepper if needed, and serve immediately.
